Serve a slice with some sour cream and fresh chopped green onion tops, or you can even serve it with a fried egg on top! Just imagine all that delicious yolk oozing over top of this pie!

Hash Brown Taco Pie - by Grumpy's Honeybunch

Cook Time: 1 hour 15 minutes
Total Time: 1 hour 25 minutes

Hash Brown Taco Pie comes together quickly, easily, and is full of flavor. The base of this recipe is made with Simply Potatoes® Hash Browns. All the work of shredding is done! I just open the bag of fresh, never frozen shredded potatoes and stir in the rest of the ingredients for this pie!

Ingredients

  • 3 small tomatoes, sliced
  • 1 tbsp green onion, chopped
  • 1 package Simply Potatoes Shredded Hash Browns
  • 4 large eggs
  • 1/2 cup light cream
  • 1-1/2 cup shredded cheddar
  • 1 tbsp, chili powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon, Salt
  • 1 tsp, ground, Pepper
  • 1/2 lb Ground Beef
  • 2 cloves garlic
  • 1/2 onion, diced

Instructions

  1. Preheat oven to 350 degrees.
  2. Saute Ground beef, garlic, and onion over medium heat until browned. Drain and set aside.
  3. In large mixing bowl combine package of Simply Potatoes Hash Browns, eggs, light cream, 1 cup of cheddar cheese, chili powder, cumin powder, salt and pepper. Stir until well combined. Add ground beef and stir to combine.
  4. Place in 9 inch round pie plate that has been coated with cooking spray. Pat mixture down until compact.
  5. Place in oven and baked for 60 minutes. Remove from oven and top with remaining 1/2 cup cheddar cheese and sliced tomatoes. Bake another 10-15 minutes, until cheese has melted.
  6. Serve with Sour Cream and green onion tops.

    We are a barbecue family, especially in the summer, so we eat a lot of potato salad as a side dish. They have a recipe for cheddar and bacon potato salad on their website that would be good any time of year or any time of day.
