This Rhubarb Martini is made with a simple rhubarb syrup that is mixed with vodka and lime juice. This adult beverage is a shaken cocktail with sweet and tart flavor. It is a pretty pink color, cold, and refreshing!

Its a well known family fact that I am enamored with rhubarb. The very first dessert I ever made on my own was a Rhubarb Custard Pie, which my Nanny proclaimed the best pie she ever ate!
I love to make new and unique recipes to make with the sour stalk, and this rhubarb martini one of my newest ones!
The making of a rhubarb martini
You might think at first that a rhubarb martini sounds odd, but if you love rhubarb as much as I do, you will be happy you tried this and enjoy them all summer long!
The rhubarb mixture is stewed with a sweetener, then strained to remove the solids. What you have left is a pretty pink, slightly sweet and tangy rhubarb syrup.
Once the syrup is made, it can be stored in the fridge and taken out to make individual martinis as desired!
When ready to serve the rhubarb martini, fill a cocktail shaker with ice, add the syrup, vodka, and lime juice and shake vigorously!

Vodka: Use a good high quality vodka for this beverage. Making the mistake of buying the cheapest vodka will make a difference in the flavor of your drink.
Rhubarb: if you grow this in your yard, you get bonus points! If not, you can find it fresh and frozen in the grocery store. Or, when it is in season, many roadside stands are around where you can buy it.

A slightly sweet and tangy adult vodka cocktail.
- 2 cups water
- 1 cup white sugar
- 2 cups thinly sliced rhubarb
for the martini:
- 2 shot glasses of rhubarb syrup
- 1 shot glass of vodka
- squeeze of lime juice
- Add the water, sugar, and rhubarb to a large saucepan and bring to a boil over medium-high heat.
- Reduce heat and simmer until the rhubarb is softened and stringy.
- Strain the rhubarb using a cheesecloth or strainer into a large glass jar. Discard solids. Cool and refrigerate syrup.
- To make the martini, combine vodka, lime juice, and ice in a shaker. Shake until frosty and serve in a martini glass. Garnish with lime.
