This is day 3 of a round up of recipes sent in for the brunch/breakfast contest being  held with my newsletter readers.  Today’s recipe is from Nan of Nan Cooks.  Nan sent in a recipe for Gem Muffins – a recipe that was from her freshman home economics class back in the 70’s :o) I loved the 70’s….I was a 70’s girl too!

Nan made and posted these the other day and she left some tips on what she did differently when she made these.  Fallon and I did make them exactly as her recipe stated when she sent it to us.  Make sure you check out her post to see the recipe made by Nan by clicking HERE

Breakfast Gems
Submitted by Nan Cooks
1 3/4 cup flour
2/3 cup sugar
2 tsp baking powder
1 tsp salt
1 egg
1/3 cup oil
2/3 cup milk
1/3 cup drained, crushed pineapple (small can)
1/4 cup fruit preserves

Mix dry ingredients. Mix egg, oil, milk, pineapple. Mix together to moisten. Spoon into muffin cups 1/2 full. Top each with a tsp preserves. Bake at 400 degrees for 20-25 minutes.
